Most late tickets on a Friday night trace back to one station that is quietly over capacity: the grill or saute gets 40 percent of every ticket and two cooks are asked to do the work of three. The expo can route perfectly and the tickets still stack up, because the math never worked in the first place. This calculator shows the load on one station before service starts, so you can move a menu item, add a body, or change how the pass calls tickets instead of finding out at 7:45.

The estimate is simple. Peak covers per hour times items per cover times the share of items that hit this station gives demand in items per hour. Cooks on the station times 60 minutes divided by the hands-on minutes per item gives capacity. Utilization is demand over capacity. Cooks needed is the number of people it would take to keep utilization at or below your target. Every number comes from your own line, not from an industry average, so the result is only as good as the timing you measure during a real rush.

How to use this tool

  1. Enter your peak covers per hour and the average number of kitchen items per guest from your POS product mix report.
  2. Set the share of items this station handles, then time a handful of tickets during a rush to get a real hands-on minutes per item.
  3. Read the utilization and cooks needed, then try moving an item to another station or adding a cook to see how the load changes.

What the math assumes

  • Demand is spread evenly across the peak hour; real rushes arrive in waves, so a station at 85 percent on paper can still pile up for ten minutes.
  • Capacity assumes each cook works one item at a time for the full hour; batch cooking and ovens or fryers that run unattended can push real capacity higher.
  • Hands-on minutes per item is your measured number; the calculator applies no industry benchmark for any station.
  • Cooks needed is rounded up to whole people and sized to your target utilization, 85 percent unless you change it.
  • Prep, restocking and cleaning during service are not modeled; they reduce real capacity.

Frequently asked questions

How do I find the share of items that go to one station?

Pull a product mix report for a busy night, tag each menu item by the station that cooks it, and divide that station's item count by the total. Sides and modifiers that require cooking count too.

What utilization should a kitchen station run at during peak?

There is no universal number. Many lines feel comfortable somewhere between 70 and 85 percent at peak because arrivals bunch up, so the calculator lets you set your own target instead of guessing for you.

Does this work for a pizza oven or a fryer station?

Yes, but treat the equipment as the limit. Use the minutes of oven or fryer time per item and enter the number of items the equipment can run at once in place of cooks.
